Carrying the protein, replacing the oil and tenderising the crumb. Three jobs from one ingredient, which is how the crust gets away with only three.

Can I cook it in an air fryer?

The pack instructions are for a fan oven at 200°C. That is what we have tested, so that is what we will vouch for.
